Chef Donita Rose and Jolly Heart Mate Canola Oil Goes to Higalaay Festival

Mga higala (friends), were you able to catch the exciting cooking session of Celebrity Chef Donita Rose in Centrio Mall, Cagayan de Oro last August 30, 2018?

With Regional Festivals rounding up in the country these coming months, Chef Donita Rose, along with Jolly Heart Mate Canola Oil, started touring Cagayan de Oro to celebrate the Higalaay Festival last August.

Chef Donita shared her own twist on the famous Higalaay dish of Sinuglaw, composed of sinugba (grilled pork) and kinilaw. The dish was made more flavorful and healthier with the use of Jolly Heart Mate Canola Oil, which is Chef Donita’s most recommended kitchen staple as it’s packed with good fats such as Omega 3 and 6 that are great for the heart. It also has Vitamin A that helps improve eyesight and has the lowest saturated or bad fats among all kinds of cooking oil which makes it a healthier option. If you want to taste the Sinuglaw that Chef Donita prepared for us, well here is the recipe that you can create at home:

This will be good for 4-6 people


• 500 mL of Jolly Heart Mate Canola Oil
• 500 grams pork belly, whole
• 500 grams sashimi-grade tuna, cut into 1/2-inch cubes, patted dry
• 5 bay leaves/laurel
• 1/2 cup unsweetened coconut cream
• 1/4 cup raw coconut vinegar
• 2 small red onions, skin removed and cut in half and the other, sliced into very thin slivers
• 2 Thai chilies, seeds removed and thinly sliced
• 4 teaspoons Ginger, peeled and grated
• 5 tbsp. of Cilantro stems and leaves chopped
• 10 black peppercorns
• S/P to taste
• 1 Lime wedges, for serving
• 1 Tabon-tabon fruit, sap only


1. Take the sap from the tabon-tabon and mix it with the coconut vinegar, chili, slivered onions, and ginger before adding the tuna. Mix well and place in the refrigerator until ready to serve.

2. Separate the skin from the pork belly, making sure to remove any excess fat. Place the skin and pork belly in a pan with water and add the bay leaves, halved onion, and peppercorns. Boil for 30 min. Remove the skin and pork from liquid and drain on a paper towel-lined plate, making sure to pat dry.

3. In another pan, heat the Jolly Heart Mate Canola Oil to medium heat. Place a wooden spoon in the oil and when you see slow bubbles rolling, place the skin in the oil, making sure to cover it immediately with a splatter screen. Never completely cover with a lid while frying to avoid fire. When skin is very crispy, remove from heat and drain on a paper towel-lined plate. When cooled, chop up the skin into crumbles.

4. Divide the pork into long strips and season with salt and pepper. Cook the strips on a grill pan over high heat with 1 tbsp. of Jolly Heart Mate Canola Oil. Take time turning the pork over to get good grill marks with a lot of smokey flavors. Let strips cool before cutting into 1/2 inch cubes.

5. Take the tuna out of the refrigerator and drain any remaining liquid. Mix in pork belly cubes, the coconut cream, and the chicharon right before serving for added texture. Season with salt and pepper.

6. Place in individual cups or serving bowls and top with lime wedges.

Big Bite 2018

Big Bite 2018 is the biggest food festival in Northern Mindanao, now in its 3rd year, organized by Ayala Centrio Mall every March where the season of summer starts and outdoor eating is fun!

I would like to showcase the fooderies we toured on day 1 of March 16, 2018. Watch out for another post for the day 2 of our food tour.

Starting with Choobi-Choobi, it is a family-oriented casual dining restaurant with over 20 plus branches and counting all over the country. Its menu courses are mostly Filipino comfort food with the freshest seafood at affordable prices. Their tagline is Lingaw Lingaw kaon sa Choobi Choobi. Try their mouth-watering Udang Lada Hitam, the Singaporean way of cooking shrimps and other kinds of seafood.

Thai Me Up
Thai Me Up opened its branch at the ground level of Centrio Mall on November 9, 2012. Its vision is to be an “Ultimate Food Destination in Cagayan de Oro City” with the mission of “Creating a Memorable Experience” for customers, giving them an Exemplary Ambiance, Exquisite Food, and Kingly Service. Try their newest affordable rice toppings.

Lola Gely’s Kitchen
It is a home baking business that is based on old family recipes. Their specialty is Sanrival and Caramel-Coated Yema, you should try it.

Tubo J Beverages
They serve 100% All Natural, Pure and Fresh Sugarcane juices and smoothies. Try their Tubomansi and Tubolemon.

Mercedes Bakery
A homegrown bakery in town proudly introduces the Chookies its newest bake creation. Chookies are bite-sized cookies that are bake on demand in less than 10 minutes and served warm from the oven. The classic chookie, is from their very own secret recipe and it’s their best-seller is arguably the best chocolate chip cooking in Cagayan de Oro.

Mai Crafts
It started its store in 1995 as a craft store and change it to a Cafe in 2015. Their specialty is Churros, a Spanish delicacy made with dough and fried till perfection then coated with sugar and cinnamon. You must also try their Tablea local chocolate cake.


Pili-an Cafe
They offer healthy food items like Pesto and Cheese Quesadilla, Choc-dipped Mookie, Pili-an’s Salad and many more. My favorite is their healthy chicharon made from soya, it’s very addicting.


Cantina Luchador
Cantina Luchador’s name is influenced by their love for Mexican food. Aside from the abundant supply of Mexican ingredients here in our city, they want to make a statement of bringing a tasty and unique menu. Originally known as Feugo-to-go when they started back in 2013. Must try is their Burrito Bowl.

The Happy Pig
Established in August 2013 The Happy Pig was originally known as Bubzies Grill. Through words of mouth and recommendation by family and friends, they were famous for their “Cheezy Baby Back Ribs”. The Happy Pig is a tasty twist on comfort food.

Doofies Grillers
They specialize in traditional Filipino favorite lutong bahay A la’Carte style with a modern twist.

Other food vendors we have tasted are Mesa which is a regular tenant inside Centrio Mall, Barkadahan Grill, BFoods and Nanay Choleng’s Muron.

Magical Nights of Lights 2017

Make your Christmas more spectacular as Ayala Centrio Mall brings back its signature lights and sounds show from Makati close to you!

Expo Mom 2017: #TeamMom in CDO!

The ultimate mommy event of the season comes back for the 2nd year in CDO! The New Nissan Urvan Premium

Nissan Philippines enters into a new segment this 2017 with the launch of the new Nissan Urvan Premium.

Sophisticated Design
At first glance, the new Nissan Urvan Premium gives off a striking appearance. Design features like a V-shaped angled strut grille, sharper head lamps, and dynamic character lines on the front and side adds to the style of the new Nissan Urvan Premium. Avida Promotes Inspired Everyday Living in CDO Community

One of Ayala Land project, the Ayala Centrio Tower condominium is now starting to turn over its units to buyers of the condo. We were toured around the building which is now one the tallest in Cagayan de Oro City. We went to the uppermost floor on the rooftop with its high-speed elevator, it just takes us several seconds from the lobby to the top floor. Check out the pictures below to see the newly built building in the city.





Avida which is the residential brand of Ayala Land has an on-going construction of another condominium which is the Avida Towers Aspira. This is a two-tower residential condominium rising along Chavez and Corrales Streets on a 7, 564 sqm total land area. Once again Kasalang Filipino 2016 – Cagayan de Oro leg is at Ayala Centrio Mall Activity Center. It is an annual Bridal & Tourism Road Show which will start on September 16, 2016, to 18.

The Kasalang Filipino 2016 fair in Cagayan de Oro is in its 11th year run already this year. It is the longest running bridal fair in Northern Mindanao organized by Professional Organizers Unlimited Inc. and Kasal.com.



This is a great venue for brides and grooms to find their wedding vendors since all the best wedding suppliers are gathered under one roof. Earth Hour Night Ride 2016

The Earth Hour Night Ride is happening again this coming March 2016 at the Ayala Centrio Mall. It is set earlier than the previous years. The Earth Hour Movement is a massive cause to unite everyone to help and protect the Earth from total deterioration. It aims to enlighten the community to be one with the goal to help the planet.


With its advocacy to promote a cleaner, sustainable environment, HABAGAT Outdoor Equipment has been enlightened to be one with the call for climate action.

Since 2009, Habagat, with its goal of striving for a Corporation with a Conscience, has been hosting the annual Earth Hour Night Ride in Cagayan de Oro City as an entity actively participating in the Earth Hour Movement. Around 1,000 bikers from different walks of life gather every year for this momentous occasion to show their concern about climate change, reducing carbon footprint, aiming for cleaner air, and asa result, this event became nationwide.

This year, the Earth Hour Night Ride will be staged in 11 locations – Cagayan de Oro, Cebu, Manila, Davao, Dumaguete, Ormoc, Tarlac, Palompon, Leyte, Ozamis and Zamboanga simultaneously.

This coming March 19, 8 P.M. at Ayala Centrio Mall, the Earth Hour Night Ride is all about getting the crowd to shine a light on climate action and help climate change.

This event is a result from the unified desire and commitment for climate adaptation and improvement. What started as a simple cause rippled into something bigger than expected.

The night ride route will be from Centrio – Luna St. – Capistrano – Macahambus – JR Borja Bridge – Ysalina Bridge – Fernandes St. – Macasandig Rotunda – loop at Divisoria – Corrales Avenue then back to Centrio. The entire ride will be approximately 6.7 kilometers in total distance.
